Pan-seared Salsiccia

Colder temperatures always create cravings for homey foods. After shoveling snow for several hours today, I really did not feel like spending hours in the kitchen in pursuit of a delicious dinner. Don’t get me wrong: I DO want a delicious dinner. It just needs to be quick and not require a ton of prep. With this in mind, I quickly threw these ingredients together - it’s basically a one-dish meal. It doesn’t require any significant amount of prep time and cooks by itself without much attention from me. So, let’s get to it. Ingredients: 1 lbs. sweet or spicy Italian salsiccia.


8-12 shallots, ends trimmed, peeled, and then halved lengthwise.


1 tart apple (e.g., Granny Smith), cored and sliced into wedges.


1 sweet apple (e.g., Fuji), cored and sliced into wedges.


1 Tbs. fresh rosemary, chopped.


1 Tbs. olive oil.


sea salt.


freshly ground pepper.


1 tsp. whole-grain mustard.


1 tsp. apple cider vinegar.


Let’s get started: Pre-heat the oven to 425 degree.


Add all the ingredients except the salsiccia and the apple cider vinegar to a shallow baking pan. Mix or toss until the shallots and apples are well coated.


Bake for 10 minutes.


Turn the apples and shallots.


Add the salsiccia.


Bake for 20 minutes, turning all ingredients occasionally.


When the veggies are tender and the salsiccia are heated through, remove the salsiccia and set aside. Add the apple cider vinegar to the veggies and mix.



Serve salsiccia and veggies together.
