Honey Waffles with Lemon-scented Cream

Yes, you read that right – sweet delicious waffles, made even sweeter and more delicious by adding your favorite honey. If your kid eats cream, you can even make a lovely lemon-scented cream and put it on top.

None of this is low-calories or low-fat – there's just no denying it. All of it is addictive and delicious, though - which seems to suit many a picky eater. Well, let's be honest, it probably suits just about anyone.

It's also utterly versatile and can function as anything from breakfast (which just occurred at my house), snack (which happened yesterday), lunch, or dinner. As you can already tell, the waffles keep well and I simply reheat them the next day by popping them into the microwave for 30 seconds. Talk about quickly solving a potential breakfast dilemma.

These waffles get eaten, too – there are no crumbs left on the plate.

As always, you will know exactly what you are feeding your child (and what you, yourself, are putting into your body). Compare the list of ingredients to ANY pre-made waffle product from the store and you'll discover that making these waffles at home is not just quick, easy, and simple, but that doing so produces a product that is superior along ALL parameters.

Without further ado, here we go:

Ingredients:

10 Tbs of softened unsalted butter (that's one stick and two Tbs! - like I said, this is NOT low-fat).

3 Tbs of your favorite honey (I use Acacia honey and love it).

2 Tbs sugar

A little spritz of vanilla extract.

2 eggs.

A pinch of salt.

Scant 2 Cups of flour.

½ Tbs of baking powder.

1 Cup of milk.

Add butter, honey, sugar, vanilla extract, eggs, and salt to a bowl. With a hand mixer, mix until creamy.

Separately, add baking powder to the flour and mix well with a spoon or fork.

Hold a strainer over the butter mixture and pour some of the flour through the strainer onto the butter mixture. Doing so will ensure that you won't have any clumps in your waffles and that the waffles end up being fluffy.

Integrate with your hand mixer while adding a bit of milk.

Alternate adding flour and milk until both are used up and you have a creamy batter.

Preheat your waffle iron, grease the surface with an oil spray (such as Crisco) and bake your waffles to desired golden shade.

Top the waffles with whatever you and your child like: More sugar, powdered sugar, cinnamon, banana, maple syrup, or the aforementioned lemon-scented cream (see below):

Lemon-scented Cream:

Ingredients:

1 Cup whipping cream.

3 Tbs sugar.

juice and a bit of rind of an untreated (organic) lemon.

Add cream and sugar to a bowl, beat on high until you obtain a somewhat stiff whipped cream.

Add lemon juice and rind to taste and quickly mix again.

And yes, that photo of my daughter is a little older...
